A very popular, juicy summer recipe originating in Lebanon. It's filled with the sweetness of ripened tomatoes and romano beans and topped with the bitterness of extra virgin olive oil. It's fresh, hearty and wholesome.
I've altered the recipe slightly by including a mixed grain quinoa and pan seared salmon for added nutritional value - and I'm happy with it!
