Taratore (tahini-lemon dressing)

Taratore is a Lebanese tahini dressing and most likely a widespread recipe with variations in Middle-eastern and Mediterranean cultures. It's made with only a handful of dairy free ingredients. All you need is tahini paste and lemon with some water as the base and the dressing turns out so delicious and creamy. It makes for a delightful addition to baked or fried fish, salads and roast vegetable dishes. It's a staple in my kitchen because of how easy it is to make all while being dairy-free and good for your health. No heated oils or sugars used at all. You can stick to the basic ingredients, or make it fancy by adding a sweetener like maple syrup or garlic for an extra punch.

Tips

Buy a good tahini paste

Your tahini paste should read "100% sesame seeds" on the nutrition ingredient label. No added sugar or oils. When you open the tahini bottle, it will have natural oils on top. Ensure you mix through or shake the bottle before pouring into your mix.

Taratore : Tahini and lemon dressing


Time: 5 Minutes Yield: 3-4 Serves

Ingredients 1/4 cup tahini paste (add more to thicken)

1/4 cup water

3 tbsp lemon juice

pinch of salt

optional: 1 large garlic clove, minced, splash of maple syrup


Method

1 Peel the garlic clove and mince until very fine.

2 Add the remaining ingredients together with the garlic and whisk until creamy and smooth.

3 Add more or less tahini, lemon or salt depending on what flavour you want most prominent. The above ratios should provide a good balance and a tangy dressing retaining the creaminess of tahini.
