Shankleesh cheese salad

A simple addition to any spread or base for a rich and flavourful salad. The best part is, it takes 15 minutes to come together. The shankleesh cheese is complicated to make, but readily available at many dairy wholesalers or supermarkets in Australia. You can buy the shankleesh cheese balls at Coles supermarkets or local/gourmet deli stores and supermarkets like panetta mercato or green valley spices. My favourite dairy producer is "Chataura" dairy products, and it comes in blue packaging. You can also find the "Green valley" cheese variety at Coles.
